Two reliable stir-fry recipies
Jun. 30th, 2013 04:55 pmBoth require the usual stir-fry mucking around with frying pans and chopping vegetables and so on. The sauces may or may not be useful for vegetable-based stir-fries.
Strips of steak, about 500g
2 cloves garlic, crushed
1 onion, sliced
Stir-fry veg, assorted (I find this works best with just one or two vegetables)
2 tbsp honey
2 tsp soy sauce
2 tbsp oyster sauce
3 teaspoons cracked black pepper
Heat a wok or pan, add some oil, and stri-fry beef. Remove and drain over paper towel.
Add a little more oil, stri-fry garlic and onion. Add veg and stir until softened. Remove and set aside.
Lower heat, and add honey, soy sauce oyster sauce and cracked pepper. Bring to the boil, then reduce heat again and simmer 3-4 minutes or until sauce thickens slightly.
Return meat and veg to wok, increase heat, and toss until heated through.
Serve with rice or noodles.
2-3 chicken thigh fillets, cut into strips
1 tbsp sesame oil
2 tsp (at least) of ground peppercorns
1 onion, sliced
A selection of suitable veg (I find this is best if you limit to 1-2 types)
2 tbsp oyster sauce
1 tsp soy sauce
1 tsp sugar.
Heat a wok or pan, and add the sesame oil (add canola oil if more oil is needed). Stir-fry chicken strips until browned.
Add the onions and stir-fry for 1-2 min.
Add pepper and stir until fragrant.
Add other veg and stir until softened slightly.
Reduce heat and stir in sauces and sugar. Toss well to combine.
Serve with rice or noodles.
