And in case I ever wish to do it again, I am recording it here:
Beef Ravioli with Tomato and Pine Nuts
(Serves 4-6)
Requires:
* Beef Ravioli (I bought a "serves four" pack from the supermarket, in the section near the cheese)
* 1 sm tin of tomato paste
* 2 tins of diced domatoes
* 2 tsp sugar
* 1/2 cup red wine
* A small pack of pine nuts (around 200grams)
* Onions (I used two small)
* Garlic (I used 2 heaped teaspoons of minced - about three cloves, I'd say)
* Vegetables - about the same as what you'd put in spaghetti bolognaise (I used carrot, capsicum, chinese broccoli, celery and shallots)
* Pepper and mixed Italian herbs
- Prepare ravioli according to packet instructions
- Roast the pine nuts in the oven (takes around 20 min - take care not to burn them)
- Fry your onion and garlic
- Dump in the tomato paste, tomatoes, red wine and sugar; stir and reduce heat to medium-low
- Add pine nuts, pepper and herbs
- Stir for around 3 minutes, then add the vegetables. If the ravioli isn't ready yet, reduce heat to simmer, cover and leave to sit.
Serve sauce on top of ravioli, with Parmesan cheese.
