This is the nommiest nom in the history of NOM.
... oh, OK, so I can't really figure out what the difference between this and risotto is anyway, aside from the type of rice. But it's still nommy!

2 tbsp butter/margarine
Dash of olive oil
1 onion, chopped
1 clove garlic, chopped
1 cup basmati rice
3 cups vegetable stock
1/2 a small butternut pumpkin, chopped into cubes and steamed for a few minutes in the microwave
6 small yellow squash, cut into thick slices
Some chopped green beans
1/2 to 1 capsicum, chopped
Heat butter and oil; fry the onion and garlic for a few minutes. Add rice; stir until coated in butter mixture.
Add stock and bring to boil. Cover and reduce heat to low. Cook for 15 minutes. Add vegetables, and add more water if the stock is completely absorbed and the rice isn't cooked. Cook for 10-15 minutes or until rice is fluffy and veggies are tender.
Now, I wonder where orbital housemate is? She's normally home by now.
