Yes, yes you do, because it was awesome. S and I got Lucy's mum to give us her recipe for chilli and pine-nut pasta, and then we did things to it. And added chicken, because S's boything doesn't believe in meals without meat.
- Put on a pot of water for boiling pasta in. This whole process takes about as long as boiling the water and then cooking the pasta.
- put a big bag of pine nuts onto a baking tray (like you'd use for biscuits or slice) and pop into a 180 degree (celcius) oven. Keep checking it, apparently they burn suddenly and without warning (they seemed to take about twenty minutes).
- Chop up an onion, a capsicum (bell pepper), several sticks of celery and some parsley. Chop or smush up two cloves of garlic.
- Fry the onion on a medium heat until caramelised. Add the garlic and one generous teaspoon of minced chilli/chilli jam out of a jar. Add around a tablespoon of sweet chilli sauce. Stir - will swiftly thicken.
- Add capsicum and celery. Turn down to low heat, cover, and wait for pasta and pine nuts
- You've probably burnt the pine nuts. Make sure you haven't burnt the pine nuts.
- Stir in pine nuts, pasta and parsley
- Top with CHEEEZ.
