IMPOSSIBLE PIE
Oct. 31st, 2009 08:45 pmIt has come to my attention that not everyone knows how to make Impossible Pie, or, indeed, what Impossible Pie is.
There, ladies and gentlefolk, is Impossible Pie. You whack all ingredients in a bowl, stir, pour into pie plate, and bake. And then you have PIE. Rumour has it that you can flavour it citrusy, and possibly even make "Impossible quiche" using vegetables somehow. Because of the weights of the various ingredients, you get a floury base, a custardy filling, and a coconut crust. Nom nom nom.
4 eggs
1/2 cup butter or marg melted
1/2 cup Plain flour
2 cups milk
1 cup sugar
1 cup coconut
2 teaspoons vanilla
Blend all ingredients, pour mixture into a 25cm greased pie plate.
Bake at 180 deg for 1 hour or until centre is firm.
