2. Chocolate Fudge Cake- from Women's Weekly Cakes and Slices 1989 (are you sensing a pattern here? ALL YOU EVER NEED IN LIFE IS THE WOMEN'S WEEKLY). This one is nice and moist. And I have an excellent icing to go with it.

250g dark chocolate
125g butter
2/3 cup castor sugar
2/3 cup SR flour
4 eggs, lightly beaten.
Recipe says use a 19cm x 29cm lamington pan, but I'm sure we've made it in regular round tins.

Melt chocolate and butter over hot water (aha I think this book pre-dates microwaves. Just melt it somehow). Combine all ingredients in a medium bowl, beat on low speed w/ electric mixer until combined. Increase to medium speed, beat for about 3 min or until mixture has changed colour and is smooth.

Pour into pan(s), bake in moderate oven for about 30 min. Stand five minutes before turning onto wire rack to cool.

Recipe says serve dusted with icing sugar, which we do sometimes, or you can use this ridiculously fabulous icing:

2 tbsp. cream (or milk, in which case use not quite two tbsp)
2 tbsp. cocoa
2 tbsp. brown sugar
1 cup icing sugar

Combine cream, sifted cocoa and brown sugar in saucepan, stir over low heat until a smooth, thin paste forms. Remove from heat and gradually stir in icing sugar.
