This is a recipe I finally got Shiny to dictate to me, because I like to have things written down, especially when it's someone else's recipe I'm cooking.


This recipe is: perfect for the slow cooker; low on chopping (you can probably buy pre-chopped pork and use chilli flakes); tomato-free
This recipe contains: dairy, pork, alliums, chilli, citrus
This recipe can be: allium-free and just as delicious I've tried it; made on more or less chilli or probably paprika; and I think it might work okay on chicken
This recipe requires: time, and additional fixings



A cheap boneless pork roast, about 1.5 kg, adjust up or down as you like
5-8 garlic cloves
2 tsp dried oregano or several sprigs fresh
2 tsp ground cumin
1/2 tsp cracked black pepper
2 bay leaves
1 cup of orange juice (bitter orange if you have it; 3:1 parts OJ and lime juice works; and just a cup of regular OJ works fine)
2 cups milk
3 hot chillies (give or take), diced (with or without seeds by preference)
1-2 cans of beans (cannellini, borlotti, etc)

Cut the pork into rough chunks - 1-2 inches across, although I can't see any reason why it wouldn't work with smaller, eg, pre-diced pork chunks. Put everything except the beans in the slow cooker and cook on high. It will look terrible as the milk curdles. Cook for most of the day ("more than you expect"), adding the beans toward the end.

Serve with rice, avocado, and fixings; or shred further and serve in wraps.

Meanwhile, important cat news: Gathgwyn is not only losing weight but putting on muscle tone from chasing and wrestling with someone 1/3 his size, despite the significant increase in treats in his diet. His afternoon auto-kibble has been restored.

He is dedicated to licking the kitten's bowl after she's done. Right now she has kitten food in tins, and he tips over the garbage bin in order to lick out the tins. Consequently there is usually a paté coloured stain on his otherwise snow-white brow.
