Spent hours tonight making decidedly second-rate vegetable pies. I used a recipe from taste.com.au, swapping out and adding ingredients in places. The fact that it made far, far too much is the recipe's fault (I ended up with ten mini-pies AND a regular oven-baked pie). The fact that the filling-liquid was nothing but eggs, and said eggs didn't do much, is the recipe's fault.
The fact that it came out quite bland is probably mine; I swapped in regular potato plus eggplant for sweet potato. The fact that the ingredients didn't cook through properly in the mini-pies is probably also my fault, but then, I'm not sure what the large pie is like inside. All of them will be better cooked when reheated, of course.
At any rate, it took bloody well forever, with minimal results. Next time I'm just going to add new veggies and spices to this recipe and be done with it.
