Recipe presented primarily for k's reference, as I cooked this tonight. Not dairy-free by any means but works with her mild lactose issues.
6 eggs
About a third of a head each of broccoli and cauliflower florets
1 onion
About 1tsp rosemary leaves
2 tsp mustard
Some garlic??? Maybe a dash of paprika?? Nutmeg??
At least 1/2 cup grated tasty cheese
1/3 to 1/2 cup milk
A couple of handfuls grated parmesan
Fry the onion, garlic, broccoli and cauliflower until aromatic and beginning to soften
Beat eggs, add rosemary and mustard (maybe paprika? Nutmeg?), then milk (beat again) and half the cheese
If your frying utensil is oven safe, add wet mix now and fry briefly over low heat. Otherwise transfer to pie dish and add wet mix. Add remaining cheddar until you approve of consistency. Top with parmesan.
Bake in a hot oven 30-40 min.
