A good food: spiced chicken tray bake

This recipe could be: allium free if you cut the garlic. (If you don't fancy the spices, try Tarragon Chicken Tray Bake; for a vegetarian option try simpler spiced vegetable roast)
This recipe requires: either chopping or pre-chopped veg; hot trays and ovens
3-4 tbsp olive oil
1 tsp chilli powder
1 tsp cracked pepper
1 tsp ground cumin
2 cloves garlic, smashed or finely sliced
2/3 cup white wine (I actually used rosé) or stock
6 chicken drumsticks
Half a head of cauliflower, in florets
2 parsnips, chopped into pieces half an inch by one inch or thereabouts
2 carrots, chopped likewise
2 potatoes, diced smaller than the parsnips
1-2 zucchini, sliced into rounds or half-rounds
1. Mix the oil and spices together. Lay the chicken in a large tray (this required my largest tray), and cover with the spice mix. Toss well, and leave the extra in the tray to season the vegetables.
2. Dice all the veg, and then mix them with the chicken.
3. Bake 40-50 minutes at 180 degrees c or until potatoes are cooked. Toss at least once. Approx 10 minutes from cooked or at the 40 minute mark, add the wine or stock and stir again - this will pick up the rest of the spice mix, and also crisp up the chicken skin.

Serves 3 main dishes, potentially with extra vegetables left over.
