Avocado and Bacon Pasta
Jan. 29th, 2017 06:27 pmI can't find the original recipe for this, so here's a write-up for posterity.
This recipe is: dairy-free save the optional garnish; tomato free
This recipe could be: vegan, if you take out the bacon (in which case add some salt or paprika, and possibly some kind of nut?)
This recipe requires: means of mashing avocados; two stoveplates and a cold bowl
This recipe is remarkably low on: chopping
2 ripe avocados
1/3 cup (ish) of olive or vegetable oil
1/4 cup (ish) lemon juice or lime juice
If using fresh lime or lemon, also grate some zest
100-150 grams of bacon or pancetta (this is best with nice crispy fried pig product; but I used lardons today because that's what I had to hand)
Basil (fresh is better but dried is acceptable)
Ground black pepper
About 3 people's worth of spaghetti
Parmesan-style cheese to garnish
Boil up your spaghetti.
Meanwhile, fry the bacon until crispy and set aside.
Scoop out avocado into a bowl (or a blender if you have one). Mash (or blend) to smooth - some lumps are fine. Add olive oil and lemon juice (if you're mashing under-ripe avocados, adding the acid earlier might help) and pepper. Stir well.
When spaghetti is cooked, mix with bacon and the avocado mix. Garnish with parmesan-style cheese.
Nom.
Makes about 3 serves, give or take.
