Pasta with Bacon, Chilli and Lemon
Mar. 23rd, 2014 02:04 pmAdapted from a salmon-paste pasta recipe in
msjackmonroe's new cookbook.
Diet: for a fishy version, see Jack Monroe's salmon-paste original. For vegetarians, I recommend this similar chilli pine nut pasta.
Accessibility: Requires messing around with frying pans, boiling pasta.
About 100 g bacon chunks
1 onion, diced
1 heaped teaspoon of sembal olek (which is what I use in lieu of chilli inna jar)
1-2 tbsp lemon juice
2 tbsp natural yoghurt
Dried Parsley
A few leaves of fresh basil
Spaghetti for 2-3 serves
Cook your spaghetti. Meanwhile, fry the bacon bits until they're starting to crisp. Add onion and fry in the bacon fat until it starts to sweeten. Add chilli, stir well, and leave simmering on lowest heat.
Just before the pasta is ready, add lemon juice, herbs and yoghurt to the onion mixture and stir well. Drain pasta, mix through the sauce. Serve with parmesan cheese if desired. Nom.
