Pancake based existence
Mar. 2nd, 2014 10:05 amI have almost-turned eggs to use up. Thus last night I dined on carrot and corn fritters using this recipe, and this morning on orange pancakes.
Below, a simpified version of the women's weekly orange pancakes, also simpler and cheaper than my go-to decadent breakfast pancake.
1 egg
1/2 cup milk (following advice from
msjackmonroe, I have laid in a supply of powdered milk for cooking with )
3/4 cup plain flour
1/4 cup orange juice
Butter
Toppings suggested:
lemon juice
sugar
golden syrup (or other dark syrup)
natural or greek yoghurt
tinned fruit salad
Whisk milk and egg lightly together. Stir in flour and orange juice, whip vigorously with spoon. Heat butter in frying pan, cook pancakes somewhere between palm-size and handspan size. Flip them over when the bubbles hold, you know the drill.
As it happened, I learned a lesson this time: a 3mm slice off the butter block is in fact enough to cook all of this batch of pancakes, BUT it's not a great idea to put all the butter in at once. By the end the butter has browned and starts to burn. NOTE TO SELF.
I ate the first few with lemon and sugar, and then as the last few were a bit burned, I smothered them in golden syrup, yoghurt and tinned fruit salad.
