Caveat: the flavour is probably a result of the spices. I take no responsibility if your chilli powder tastes different to mine. I was also using chicken stock powder, because that's what I had, so that might have some effect.

WHAT YOU NEED:
Kidney beans. SOME kidney beans. I guess about 1 cup dried beans, 2 cans canned beans?
Oil
1 diced onion
2 garlic cloves
1 red capsicum / bell pepper
1 zucchini
2 carrots
2 tsp chilli powder (Decent, NOT STALE chilli powder, not that I'm thinking of any englishmen in particular)
2 tsp ground cumin
2 bay leaves
Lentils! About 1/3 of a cup of green lentils, I guess
6 cups water (perhaps a bit less if you're using canned beans)
2 cubes of boullion / stock powder /whatever
400g can diced tomatoes
Sour cream
Possibly lemon wedges?

WHAT YOU DO WITH IT:

1. Soak your kidney beans overnight, and remember to bring them to the boil and boil off a bit before draining the water. Try not to give yourself kidney bean poisoning.
2. Heat the oil, fry the diced onion until it starts to sweat. Add garlic, capsicum, carrots, zucchini and cook for a few minutes.
3. Stir in spices and bay leaves, cook for another minute or so. Stir in the lentils.
4. Add water, tomatoes, stock powder, and beans. Increase heat and bring to the boil.
5. Reduce to a simmer and cook, uncovered, for 45-75 minutes, or until the beans are tender.
6. Serve with sour cream.

Disclaimer: this recipe is bastardised from a pinto bean soup recipe in 'Easy Vegetarian One Pot', which I heartily recommend.
