Ingredients:
Vegetables!
Suggested vegetables are: mushrooms and capsicum, chopped; asparagus, beans and maybe carrots, chopped and quickly microwaved so that they're reasonably cooked
1 x onion, chopped
2 x garlic cloves, chopped
3 tablespoons or a generous pouring of olive oil
4 cups of stock (chicken or vegetable for white wine, beef if you have it for red wine)
3 tbsp wine - red or white, although note that the red wine makes your risotto look like BRAAAINS, at least according to Lucy monster
Maybe some bacon or diced ham pieces
1 generous cup of Arborio rice
Parmesan or Pecorino cheese
What you do with them
1. Sautee the garlic, onion and maybe bacon or ham for ~ 3 min, in a frying pan in the olive oil. While so doing, put the stock in a small saucepan nearby and bring it to simmer.
2. Stir in the rice, making sure that the grains are coated in oil
3. Stir in the wine! Pour yourself a glass of wine while stirring!
4. When the wine is evaporated/absorbed, spoon in a ladle of stock. Stir.
5. When the first ladle is absorbed, repeat.
6. Repeat for ~ 20 minutes, by which time the rice will be all nice and fluffy
7. One or two ladles from the end, add mushrooms and capsicum and any other non-microwaved veggies you can think of
8. With the last ladle, add the par-cooked veggies. Stir them through for a couple of minutes.
9. Serve with grated cheese on the top!
