Cake again
Nov. 25th, 2008 06:54 pmI tell a lie. Apparently this is the Fudgy Chocolate Cake which is usually Dad's birthday cake. Same cookbook, but a bit more difficult to make.
3. Fudgy Chocolate Cake:
185g butter
1/3 cup cocoa
1 1/4 cups castor sug
3 eggs, separated
3/2 cups plain flour
3/4 cups water.
2 20cm round pans.
Cream butter, sifted cocoa and sugar in a small bowl w/ electric mixer until light and fluffy, beat in egg yolks. Transfer to large bowl, fold in sifted flours and water. Beat egg whites in small bowl until soft peaks form, fold lightly into chocolate mixture. Pour into pans, bake in moderately slow oven for about 1 1/4 hours. Turn on wire racks to cool: join cakes with whipped cream and dust with icing sugar if desired.
