Not the cake I made today, which /lied/ to me when I stuck a knife in, and was sekritly still molten in the middle. Oh no. A pasta dish!
Lemon, Bacon and Feta Pasta
This recipe is: Fairy quick and easy (can be done in the time it takes to boil pasta)
This recipe could be: gluten free (I use GF pasta); meat-free (cut the bacon). I think you'd need to rework it quite a lot to work without cheese, but swapping the feta for aged parmesan would get you a lactose-free version.
This recipe requires: at least two pots on a stove at once
About 3 servings of pasta of your choice
2 rashers bacon, diced
A fistful of green beans, trimmed and cut to 1 inch pieces
3 cloves garlic, diced
One onion, diced
Generous swish of olive oil
About 100 grams feta cheese
1-2 tbsp lemon juice
1. Put the pot on for the pasta; when it boils, add the pasta and cook to packet directions
2. While that's happening, sautee onion and garlic in oil, about 3 minutes
3. Add bacon and fry about 3 minutes or until crispy (you may need to turn up the heat)
4. Add beans, fry for a further two or three minutes - you want the beans to be softening but still crunchy.
5. When the pasta is nearly ready, add lemon juice and crumble the feta over the bacon/vegetable mix
6. Stir through cooked pasta.
7. Nom.
