Loosely based on a recipe from budget bytes which calls for italian pork/fennel sausage, which I cannot find.

This recipe is: gluten-free, assuming you check your sausage; dairy-free if you leave out the cheese.
This recipe could be: pork-free if you swapped the sausage type.
This recipe is not for: vegetarians, people allergic to tomatoes.
This recipe requires: hot pot on stove, a bit of chopping. A bit of time and patience, but not as much as for a proper soup/stew

What you need:

1 x onion
2-3 cloves garlic, diced
1 u-shaped chorizo sausage, sliced into 1cm slices and those cut in half.
1 can (400g or thereabouts) of big white beans (it's more fun if the beans are about the size of the sausage pieces)
1 can diced tomatoes
3 blocks (? my blocks are 1-2tbsp each) frozen spinnach
Dash dried basil
Dash dried oregano
Generous dash of ground black pepper
1-2 tsbp oil

Possible serving: crusty bread, goats or fetta cheese

Sautee the onion and garlic in oil for 1-2 minutes. Add the diced sausage and fry until browned.

Add the remaining ingredients, stir well, turn heat down to low and simmer for about 15 min, stirring occasionally as the spinnach unfreezes.

Serve over crusty bread and with cheese on top
