A combination of my mother's Chang's Fried Noodle Salad (descended, by roundabout paths, from the one on the back of the Chang's packet) and this stir fry recipe.


Diet: could easily be vegetarian/vegan, in which case I would suggest adding the nuts from the taste.com.au recipe back in; easily gluten-free if you use tamari instead of soy, and leave out the fried noodles.
Accessibility: this is, tbh, more faffing around than is really warranted. The taste.com.au recipe, or the salad recipe on the back of the Chang's noodle packet, which is the ancestor of mum's salad, are both easier.


1 medium wombok, shredded
2 rashers bacon, diced
1 onion, sliced finely
Some spring onions (... the long green ones. Their names vary by country)
A snappy green vegetable, eg snow peas or fresh beans
Optional: sliced mushrooms (champignons de paris, swiss browns, or asian mushrooms; fancy european mushrooms would be weird)
1 pkt Chang's Friend Noodles (If you're not in Australia, as far as I can determine these are pre-fried, pre-seasoned Hong Kong Style Noodles. Theoretically you could cook these up until crispy and break them down and stir them in - if so, I recommend the Hoi Sin seasoning linked to by the Woks of Life. I've been intending to do this since I figured out what kind of noodles I needed, and I haven't done it yet. I just skip them when not in Aus.)
Some garlic (1-2 cloves diced, or a tsp minced)
Vegetable oil
Sesame oil
Rice wine vinegar
Soy sauce

Heat vegetable oil and fry the onion and bacon until crisp.
Add a splash of sesame oil, stir, and then add the wombok. Stir fry until it cooks down a little; add the snappy green veg and the mushrooms. Stir fry until the veg is just tender and the mushrooms are reasonably cooked.
Add splashes of rice wine vinegar and soy sauce respectively.
Stir in the fried noodles. Garnish with the spring onion.

Makes 3-4 main servings and probably about 6 sides. Serves well cold the next day.
